Raw Honey-Spiced Gingerbread Cookies

Sweeten your Christmas with our honey-spiced gingerbread cookies.  Not only are they delicious but also incredibly easy to make.  The raw honey adds a subtle complexity to the flavour, keeping the cookies soft and chewy whilst adding a natural touch of sweetness.

Ingredients for the Perfect Honey Gingerbread Cookies:

    • 1/2 cup unsalted butter, softened
    • 1/2 cup honey (we recommend our delicious [Your Honey Variety], but any will do!)
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 3 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 tablespoon ground ginger
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves

 

How to Make Soft and Chewy Gingerbread Cookies with Honey:

    1. In a large bowl, cream together the butter and honey until light and fluffy. Beat in the egg and vanilla extract.
    2. In a separate bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves.
    3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    4. Divide the dough in half and flatten each half into a disk. Wrap in plastic wrap and chill for at least 2 hours (or overnight).
    5. Preheat the oven to 175°C (350°F). Line baking sheets with parchment paper.
    6. On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Use cookie cutters to cut out your favourite festive shapes.
    7. Place cookies on prepared baking sheets and bake for 8-10 minutes, or until golden brown.
    8. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely
